Ice cream of forest fruits and fresh cheese (without ice cream)

My vacations have been very calm and relaxed, something that I really needed and the incorporation to work with optimism, although with a little more sleep than days ago. The important thing is that life continues and we are uploaded to it. ; D

That said, let's go with the recipe ... Before taking my vacations I like to leave the fridge clean of anything that can be damaged, and from this task came this delicious ice cream, because I had some yogurt and a bowl of cream cheese almost whole but already started, and as in the freezer I still had berries, I thought that the The best solution was to make an ice cream that I could leave in the freezer without danger of spoiling it. Said and done and the result of the most satisfactory.



INGREDIENTS:

  • 200 gr of fruits from the forest (I used frozen)
  • 2 tablespoons of sugar
  • 1 tablespoon of soft honey
  • 200 gr of cream cheese
  • 1 natural Greek yogurt (75 gr)







ELABORATION:

For a few minutes, let simmer the berries with the sugar until it has dissolved and the fruits are soft. (It is not necessary to previously thaw the red fruits)
Add a spoon of honey and crush the compote.
(make sure it is a soft honey so that it does not have any taste) You can also use inverted sugar)
Colamos the preparation to avoid pips.

Batimos the fresh cheese and yogurt until we have a creamy mix.

Mix both preparations until the mixture is homogeneous. We dump it in an airtight container and take it to the freezer at least one or two hours before consumption.





NOTES:

If you use fresh fruits instead of frozen you may have to add a spoonful of water to make the compote.
I have not used ice cream maker and still no ice crystals have formed so I have not had to mix the mixture again. Flowers that accompany the ice cream are chocolates that they gave me; if you have mold and white chocolate are very easy to make.
