Homemade tzatziki


Tzatziki is a typical sauce of Mediterranean cuisine, more specifically Greek and Turkish. It is made with cucumber, yogurt and fresh herbs and for me it is one of the richest and most refreshing summer sauces.
It is a great dip, served with carrots or other vegetables, some snacks, pita bread ... and it is also the perfect accompaniment to meat or fish. And if that were not enough, it's very easy to do.

I'm sure many of you know it and have tasted it, but for those who have not yet tried this delicious sauce or do not know the recipe, here I leave mine. Hurry, before the end of the cucumber season



INGREDIENTS:

  • 1 cucumber
  • 1 clove of garlic
  • 2 tablespoons chopped fresh mint
  • 300 gr of natural Greek yogurt
  • salt
  • white pepper
  • 1 tablespoon of extra virgin olive oil
  • the juice of half a lemon
  • (optional) 1 teaspoon of vinegar white wine

ELABORATION:

Peel and grate the cucumber finely (if you do not like or you are indigestan the seeds you can eliminate them before with a knife)
Add a pinch of salt to the cucumber grated and place it on a sieve to drain a large part of the water containing. Then we dry it well with absorbent paper.

In a bowl we put a garlic clove pressed or very crushed so that it stays like a paste, a pinch of white pepper, chopped fresh mint, oil, lemon and Greek yogurt . Mix everything well. Try the taste and if you like it to have a more sour touch, add the teaspoon of vinegar

Add the dried and dried cucumber grated . Mix well.

Let cool the tzatziki in the refrigerator until serving.

NOTES:

You can also use parsley or dill instead of mint (I sometimes use mint and give it a very rich flavor)

We can also use a natural yogurt (not Greek) and to make it more creamy, what we will do is leave it on a colander so that the whey drains out and it becomes more dense.
